Season your fish with salt and pepper
Heat a frying pan and add a little olive oil and 1 tbsp of butter
Add the sea bass, skin side up and fry for 2-3 minutes. Season the skin side with salt and pepper
Turn the sea bass over and fry skin side down for a further 2-3 minutes, depending on the thickness of the fish
Once the fish is done, remove it from the pan and add the capers and lemon juice and cook for 1 minute.
Remove the pan from the hat and add the remaining 2 tbsp of butter and mix into the sauce.
Add the fish back to the pan and turn on to a medium heat. Spoon the sauce over the fish and heat for 30 seconds.
Serve on a big platter or individually on each plate. Steam some baby potatoes and green vegetables as as an accompaniment.
