Tomato Sauce (for pasta)

  • 1 tbsp olive oil
  • 3 cloves garlic
  • 2 tins plum tomatoes
  • 2 tsp mixed herbs
  • 1 tsp oregano
  • fresh basil leaves (small handful)
  • 1/2 tsp sugar
  • salt
  • black pepper


  • Heat your olive oil and fry the garlic gently for 1-2 minutes being careful not to burn it
  • Add the tinned tomatoes, herbs and sugar and bring to the boil. I usually add a little water to the tin to clean it out and add this to the saucepan.
  • Simmer for 20-25 minutes making sure to stir every now and then
  • Puree the sauce using a hand blender until smooth
  • Season with salt and black pepper. The quantities will depend on your taste buds.
