These potatoes are a lovely accompaniment to my spicy roast chicken and are simple to make.
You can use any combination of spices that you like and feel free to adjust the quantities to suit your palate.
When cooking the potatoes make sure to spread them well on the baking tray so they don’t overlap. This will ensure they all get crispy and golden.
Roast Spicy Potato Cubes
- 800 g potatoes
- 2 tbsp rapeseed oil
- 1/2 tsp coriander powder
- 1/2 tsp chilli powder
- 1/4 tsp cumin powder
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- Peel and chop the potatoes into bite size pieces
- Combine the oil and the spices and mix well
- Put the potatoes into a bowl and pour over the spiced oil and mix well until all of the potatoes are coated with the mixture
- Spread the potatoes in a baking tray, making sure they aren't over lapping and bake for 45 minutes until golden brown
