Meatball Subs

I think the first time I had a meatball sub was shortly after I moved to San Francisco. I lived in North Beach so I was surrounded by some great eateries including some delicious sandwich shops. I thought I had died and gone to heaven when I took my first bite. Even now when I bite into my homemade subs I’m transported back to Washington Square.

Whenever I make meatballs in tomato sauce I always make extra so we can have some sandwiches the following day. We either have them solo for lunch or with chips and salad for dinner.

I use 3-4 meatballs per person. I recommend using soft rolls for this sandwich as it is easier to eat but I have made it with baguettes also.

Spread the tomato sauce on each side of the cut roll. You can use as much or as little sauce as you like. Just remember the more sauce the messier the sandwich!

 

 

 

 

 

Then pop 3 meatballs on one side and close the roll. Sometimes it is easier to cut the meatballs into bite sized pieces before closing the roll. This makes it easier for kids to eat. Make sure to squash down on the roll a little to ensure it will fit into your mouth. Using a soft roll definitely helps in this regard as it molds itself around the meatballs better and is easier to bite into.

You can top with cheese if you wish but I prefer not to mess with the taste of just meatballs and sauce.

Ingredients

  • 12 meatballs in tomato sauce (from my meatballs in tomato sauce recipe)
  • 4 soft rolls

Instructions

  • Heat the meatballs in tomato sauce in a saucepan
  • Cut the rolls into half
  • Spread some sauce on both halves of the roll and top with three meatballs, cutting the meatballs if necessary
