I love to make this for lunch when I have some leftover vegetables in my fridge. You can add any vegetables that you have (cooked and uncooked) including potatoes, courgettes, tomatoes, peppers, onions, broccoli, carrots. You can also add some chorizo or bacon bits if you want. A fried egg is also lovely on top.
You can spice it up with some cayenne, paprika or Tabasco sauce if you want.
Fried Leftover Potato & Vegetables
Servings 2 people
Ingredients
- leftover cooked potatoes (can be boiled, roasted or even mash)
- leftover cooked vegetables (carrots, broccoli, peppers, aubergine)
- 1 onion
- 1/2 courgette
- 1 tomato
- olive oil
- 1 tsp mixed herbs
- salt
- freshly ground black pepper
Instructions
- Chop your potatoes and your cooked vegetables in bite sized pieces
- Thinly slice the onion, tomato and courgette
- Heat the oil in a frying pan
- Add the potatoes, onions and cooked vegetables and fry for 5 minutes
- Add the courgettes, tomatoes and mixed herbs and fry for another 5 minutes
- Season with salt and freshly ground pepper
