Crispy Chicken Breast

This is a great, versatile way to cook chicken breasts. It is quick and easy to make and can be used in a variety of ways. My son calls it smacked out chicken breast and has it at least once a week for lunch with a delicious home made bread roll.

It can also be served for dinner with your favourite pasta, potatoes, rice, couscous and vegetables

You could also use it in a warm salad with some lovely mixed green leaves, olives and tomatoes.

It is great for sandwiches and packed lunches.

Crispy Chicken Breast

Prep Time 5 minutes
Cook Time 8 minutes
Servings 2

Ingredients

  • 2 chicken breasts
  • salt
  • black pepper
  • herb mix (I use italian herbs)
  • olive oil

Instructions

  • Heat your frying pan.
  • Using a meat hammer smack out each chicken breast until it is all the same thickness.
  • Season each side of the chicken breasts with salt, pepper and your favourite herb mix.
  • Drizzle a little olive oil on each side
  • Add the chicken breasts to the hot pan and fry on both sides until crispy and golden and cooked through.
    This should take about 8-10 minutes. You can use a meat thermometer to verify that it is cooked.
  • Serve with some salad, lettuce and mayo in a crusty roll.
  • You can also serve it as part of a warm salad or with your favourite pasta, potato, rice, couscous and vegetables.
