This decadent chocolate torte is my 16 year old son’s default choice for his birthday or a special occasion. It comes from a recipe book called “Zest!” that was created to raise money for an Irish charity.
During one of the lockdowns my son and I decided to create a meal from the book and this was the dessert he chose. Since then he requests it for his birthday each year.
It is quite easy to make and looks and tastes amazing. You can serve it with raspberries as I do. You could also serve with freshly whipped cream or ice-cream but I find the torte is already rich enough.
Chocolate Torte

Ingredients
- 180 g plain flour
- 1 tbsp cocoa powder
- 50 g caster sugar
- 90 g unsalted butter
- 1 egg beaten
- 250 ml cream
- 250 g dark chocolate I use 55% cocoa
- 50 g butter
- Raspberries to serve
Instructions
- We will make the pastry first.
- Sift the flour and cocoa powder into a bowl and stir in the sugar
- Add the butter and work in with your fingertips until well combined.
- Mix in the egg to form a firm dough. If it feels a little dry add a teaspoon or two of water
- Wrap in clingfilm and chill for 30 minutes
- Preheat the oven to 180C/350F/Gas Mark 4
- Butter a loose bottomed tart tin. Knead the dough until smooth and roll out so it is large enough to line the tin including the sides.
- Place the dough over the tin and push gently inside the sides. Trim the edges.
- Prick with a fork and line with parchment paper. Fill the tin with baking beans or dried beans to prevent the pastry from rising.
- Bake for 5-7 minutes, then remove the paper and bake for a further 5-7 minutes or until the pastry is cooked.
- While the pastry is baking, we will make the chocolate filling
- Heat the cream until it just comes to the boil.
- Remove from the heat ad gradually whisk in the chocolate and butter until it is melted and the mixture is nice and smooth.
- Pour the mixture into the tart case.
- Chill in the fridge for 2-3 hours (or even overnight) until the tart is set. Remove 30 minutes before eating.
- Slice and serve with some raspberries. You could also serve with some whipped cream or ice-cream.
- If making for adults only you could add 2 tbsp of an orange or coffee liqueur. You would add this to the filling after the chocolate has melted and before pouring it into the tart case.
