This is a twist on a dessert my mother used to make for us during the winter when we were kids. In the original recipe the apples were filled with raisins, topped with sugar and a knob of butter and baked. In this recipe I also add chopped nuts, cinnamon and the juice of an orange for an additional flavour burst.
There is something so comforting about baked apples on a cold winter’s evening and it always brings back happy childhood memories for me. I like to serve them with pouring cream but some vanilla ice-cream is another great choice.
